Where Downtown Edmonton Learned to Treat the Late Afternoon as an Event
Bianco runs on an Italian premise most Canadian dining rooms skip: the hour before dinner deserves a menu of its own. Six afternoons a week the room switches into Aperitivo mode — a Milano-Torino or a spritz, warm olives, a couple of meatballs — and the evening builds from there instead of starting cold at eight.
The Concept · The Story
The restaurant is the project of two childhood friends, Dave Manna and Joe Viana, who had spent more than twenty-five years in the business together before opening a room of their own in the heart of downtown. Their brief is stated plainly: good food starts with good ingredients handled by people who care. Bianco is the dressed-up half of a pair — its cousin across the river, Rosso, does wood-fired Neapolitan pizza, and the resemblance is written into Bianco’s own menu, where one of the pizzas is simply called Rosso.
What to Order
The bar is the reason to arrive early. Twenty-seven sparkling wines run the list, from Lambrusco and Moscato d’Asti through Franciacorta to grower Champagne; three of them — a Lambrusco, a Prosecco and a Cava — are poured by the glass, so you can start without committing to a bottle. The cocktails lean Italian and slightly theatrical: the house spritz on rosé Cava with Cocchi Americano and grapefruit, the Bella Notte with cassis and crème de violette, a smoked Amaretto. Every pasta and pizza is made in house from unbleached organic wholegrain flour — squid-ink Linguini al Nera with prawns and scallops in gorgonzola cream, Campanelle Aragosta with lobster and fra diavolo, Bucatini al Ragù di Agnello with charred eggplant and mint. Among the pizzas, the Dolce Emma stacks smoked pancetta, maple syrup and crispy prosciutto.
The Space
The owners describe the look as the industrial elegance of a downtown core, softened with Italian marble and vintage pieces collected on their travels; their own line is that an evening here should feel like Nonna’s table, if that table stood in a marble room. In practice after-work drinkers, dates and long dinners overlap without anyone feeling misplaced, with windows onto the most sociable pedestrian block downtown has.
Good to Know
What is Aperitivo Afternoons? A separate short menu of aperitifs, draft beer, wine and light bites served six afternoons a week, Monday to Saturday, aimed squarely at the stretch between work and dinner.

Should I book? For evenings yes — the room takes online reservations and fills up late in the week; the aperitivo stretch is far easier to walk into.
