Bianco: Twenty-Nine Sparkling Wines and an Aperitivo Habit

Bianco imported something downtown Edmonton badly needed: the Italian conviction that late afternoon deserves its own menu. On Rice Howard Way’s pedestrian strip, this rustic-elegant room pours twenty-nine different sparkling wines by the glass daily and runs weekday aperitivo afternoons — light bites, low light, spritz logic — turning the dead hours between lunch and dinner into the best part of the day.

The Story

Bianco is the polished sibling of Rosso, Edmonton’s wood-fired Neapolitan pizzeria, and the family resemblance shows in the dough. Set in the Phipps-McKinnon Building, the room was built on one line of philosophy — good food starts with good ingredients handled by passionate people — and one aesthetic: dining at a traditional Italian grandmother’s table, if your grandmother had marble.

What to Order

Every pasta and pizza is made in-house by hand, from organic, non-GMO, unbleached wholegrain flour — a detail you can taste in the chew. Start with antipasti, argue over pizza versus fresh pasta (the sauces settle debates), and watch for the tableside cheese-wheel pasta ritual on select evenings. Italian-inspired cocktails and a deep wine list close the loop.

The Space

Italian marble, antique décor and warm wood — rustic without the splinters, elegant without the chill. Windows onto Rice Howard Way give the room the sociable pulse of downtown’s most walkable block.

Who It’s For

Aperitivo converts, after-work escape artists, downtown dates, and anyone who thinks bubbles shouldn’t wait for an occasion.

Good to Know

When is aperitivo served? Weekday afternoons — the ideal bridge between meetings and dinner.

How many sparkling wines by the glass? Twenty-nine daily — a list built for exploration.

Is the pasta really handmade? Yes — all pasta and pizza dough is made in-house from organic flour.

What’s the Rosso connection? Same family — Rosso does wood-fired Neapolitan; Bianco is the elegant sister.

Do I need to book? Evenings yes, especially late in the week; aperitivo hours are easier.

Bianco never disappoints. This time I wanted to try dishes I hadn't had before. The espresso martini was perfect — a perfect blend of liqueurs. The Caprese salad was probably one of the best I've ever had. The main, the…

The food was incredibly tasty, the pasta cooked perfectly, the appetizers just incredible!! The service is the only thing I'd give this restaurant 10 stars for, because our server Hannah was, without a doubt, the best se…

Bianco was such a pleasant surprise! The food was tasty, and the portions huge. We definitely ordered too much for two — it was a bit much — but we were really hungry, so we still managed to eat about 80% of everything…

A wonderful cozy spot, friendly staff.

The bruschetta was bland, and they used pea shoots instead of basil, since pea shoots are mild and don't add flavour. Bruschetta should be rich and full, not mild and delicate. The rigatoni had potential but lacked depth…
