Sabor: Tapas Hours in the Warehouse District
There’s a moment most evenings at Sabor when the sangria hits the table, the octopus arrives charred, and downtown Edmonton briefly relocates to the Iberian coast. This warehouse-district stalwart in the historic Boardwalk Building has been staging that moment since 2008, and its bar remains one of the centre city’s most convincing arguments for eating dinner in small, escalating rounds.
The Story
Sabor is a friendship with a liquor licence: Christian Mena, Chilean-born and a former professional singer, and chef Lino Oliveira, who grew up in Portugal learning to cook from his mother, village women and the fishermen of the northern coast. Both raised in Edmonton’s north end, they built the restaurant around a three-word creed — flavour, feeling, friendship — and the room has run on it for nearly two decades.
What to Order
Come in tapas mode: share plates first, commitments later. The paella is the communal centrepiece, the lobster risotto the indulgence, the piri piri chicken the heat-seeker’s pick — and the seafood, Ocean Wise certified since 2015, is the house’s true language. Portuguese and Spanish bottles dominate a wine list built for long tables and longer conversations.
The Space
Brick-warmed and low-lit inside one of downtown’s handsome heritage blocks, with a bar that fills early on weekends and a dining room that gets louder — in the good way — as the sangria circulates.
